Kabsa Masala

Ingredients

Salt, Coriander, Cumin, Ginger, Garlic Turmeric, Black Pepper, Fennel, Cinnamon, Dry Lemon, Acid (Citric Acid), White Pepper, Clove, Black Cardamom, Anti Caking Agent (Silicon Dioxide), Artificial Saffron Flavoring.

Beef/Mutton/Chicken

Mehran Basmati Sella (Par Boiled) Rice

1 kg (Washed and Soaked for 2½ hours)

Mehran Ginger Paste

1 tbsp

Mehran Garlic Paste

1 tbsp

Cashew Nuts

½ cup

Almonds

½ cup

Raisins

½ cup

Oil

½ cup / 100g

Mehran Kabsa Spices

5 tbsp / 50g

Steps of Cooking

  1. Take a bowl, add Meat, Mehran Ginger & Garlic Paste and Mehran Kabsa Spices. Mix well and marinate it for 1 hour.
  1. Heat oil, add marinated meat, and fry it for 5 minutes. Add 4 – 5 glasses of water. Cover and cook on low heat until the meat becomes tender. (For chicken 4 – 5 glasses, for beef/mutton, add 8 – 9 glasses of water).
  1. When 3 glasses of stock remain, take out the meat and keep aside. Now add soaked Mehran Basmati Sella Rice in the same stock and cook it for 5 minutes on high heat then lower the heat, cover it and further cook it for 10 minutes. Now put the cooked meat to the kabsa rice.
  1. Separately, take a pan, heat 1 tbsp of oil, add above mentioned dry fruits and sauté it for 2 – 3 minutes. Spread it on to the kabsa rice. Cover and cook on low heat for 10 – 15 minutes until rice is done.

Serving Suggestion:

Serve with salad and Salsa sauce.

Serving for 6 – 8 people.  (5 tbsp / 50g)
