Kabuli Rice Masala

INGREDIENT

Chicken/Lamb/Mutton (Whole Chicken or Large Meat Portions)1 kg Mehran Basmati Rice (Par Boiled)750 g (Washed and Soaked for 30 Minutes) Onions (Medium)2 pcs (Sliced) Carrot (Peeled and Cut into Matchsticks or Shredded)2 pcs Almond (Roasted)2 tbsp Cashew nuts (Roasted)2 tbsp Raisin (Whole)2 tbsp Sugar2 tbsp Orange Juice½ cup Hot Water5 cups Cooking Oil/Melted Butter1 cup Mehran Kabuli Rice Masala1 packet

STEPS OF COOKING

Steps of Cooking:

  1. Heat oil fry onion until light golden. Add meat and fry for 1-2 minutes. Add Mehran Kabuli Rice Masala and further stir for few minutes.
  2. Now add 5 cups of water, orange juice and bring to boil. Cover and cook on low heat for 30 minutes. (For lamb/mutton cook for 45 min to 1 hour until meat becomes tender).
  3. Add rice and bring to boil and cover tightly and cook on low heat until rice becomes tender.
  4. Separately take a pan, heat 3 tbsp butter and stir fry carrots for 2-3 minutes on high flame then add sugar. Stir fry continuously for 2 minutes remove from heat and set aside.
  5. Put rice in dish and place cooked meat over it. Add fried carrots and mix nuts over the rice.

PREPARATION TIME:

  • FOR CHICKEN: 50 minutes
  • FOR BEEF/MUTTON: 1 ½ hour

SERVING SUGGESTION

    • SERVE WITH RAITA SALAD
    • SERVING FOR 5-6- PEOPLE. (1 PACKET 70 G)
